Green smoothie ready for the way to college. Many people complain of being time poor in the morning. So it's important to find a few simple ideas that can be made the night before or whipped up quickly in the morning. Smoothies are a great quick breakfast and a great way to pack in lots of nutrients. Especially your greens!! Recipe: 1/2 frozen banana, 1/2 avo, 3 large silverbeet leaves, 1 Tbsp greens powder, 1/2 lime, 1 tsp chia, coconut water and water... BLEND (Try not to wake your household 🤔)
The toughest days are the ones that creep up from nowhere. Someone pulls the ground from beneath your feet and the world looks like a bleak place once more. Bruised and battered you pick yourself up again. Slipping physically has taken its toll mentally. From such a high to such a low. I feel a little giddy.
Last week I had to firmly kick myself in the b*tt. I had to start make sure this year I’m going to achieve the goals I’ve set myself. I was too late! . For too many weeks I had been burning the candle on both ends. . For too many days on end I had neglected to get enough sleep. . For too long had I tried to keep all the balls I had given myself up in the air. (Failing miserably, by the way!!) . I knew I was in trouble when a head cold started to creep up on me. It is sure sign of my body telling me “Enough!” . It was too late to prevent it from following the path I well remember from my corporate days. . Sure enough, that’s exactly what happened. . As I write this the cold has reached my vocal cords. Getting them to produce any sound above a whisper requires a physical effort that leaves me gasping for breath. . There is a difference however, with all the times this happened to me while I was ‘in corporate’! . This time I’m actually taking time to recover instead of trying to push through it. . I’ve rescheduled appointments that require me to talk a lot. . (Side benefit: lots of quiet time for further thinking on how to realise my goals for this year. Which includes an almost filled out year planner and a webinar morphing into a mini-course!!) . I’ve given myself permission to take naps during the day. . I’m reminding myself daily that I treasure my health and my body. . All part of the ‘taking care of myself’ routine I was restarting when I wrote my previous post. Once again I’m reminded how important it is we listen to our bodies. . When we truly listen, we hear the warning bells long before stress incapacitates us. . It may take weeks, months or even years for our bodies to give in. At a certain point though it will tell us loud and clear it has endured enough!! . I'm just a little bit (or maybe a lot) in love with Marcus Wareing's new cookbook. I thought I had enough cookbooks and recipes to keep me going for a few months, but after cooking the duck with Chinese spice and red cabbage (read in a friend's copy) I just had to buy it. Marcus adds a splash of magic to some of the old favourites, and introduces delicious new ideas to brighten up the week. I've not even started on the 'entertaining' or 'baking' sections... This was curry-spiced salmon with seeded pumpkin salad. #salmon @marcuswareing
A huge thank you to the Carling Family for amazing hospitality over the past week. Leanne and Graeme are a Scottish couple living just outside of Malaga and I'm still blown away by how kind and supportive they were towards me. Picking me up an hour from their house, taking me to the airport and back, providing food and shelter and also very generously buying me some new cycling clothes. It was amazing spending some time with them in their beautiful home and playing with the kids. We'll definitely keep in touch and hoping to see them again soon 😊❤ It's always hard leaving the people you meet on this journey but I'm very privileged to have the opportunity to meet as many amazing people as I do. 🚴🌎🇪🇸
