Spanish Chicken with peppers and olives and a lush glass of Spanish Campo Viejo Rioja Tempranillo. This is an old propoints recipe from the Seriously Satisfying WW cookbook. I've adapted it slightly based on my chicken weights I had and haven't used olive oil. I've also based it on serving 6 people rather than the suggested 4 due to my chicken weights. 7SP per serving. I've made up some Tupperware portions for a future night of leftovers. You could obviously serve with rice for additional points. And if preferred remove the olives if you're not a fan. 2 red peppers 2 yellow peppers and 1 green pepper de-seeded and chopped, 6 large vine tomatoes halved, 4 garlic cloves, 2 fresh thyme sprigs, 2 bay leaves, Low fat cooking spray, 550 Skinless boneless chicken thighs, 500g Skinless boneless chicken breasts, 75ml Red wine, 125ml Chicken stock using gluten free stock cube, Salt and freshly ground pepper. Preheat oven to gas mark 6/200c/fan oven 180c. Place peppers tomatoes garlic Thyme and bay leaves in a roasting dish and spray with the cooking spray, season and roast for 20 mins. Meanwhile heat cooking spray in a large frying pan until hot. Then add the chicken to brown for 4-5 mins turning regularly, then remove from heat. Also remove veggies from oven and give them a stir, add the wine and made up stock and stir. Then nestle the chicken and any pan juices into the vegetables and put back in the oven to cook for 25 mins. Another wicked exercise . The hip thrust . Gets you that booty 😂 . Make sure your feet aren't too far forward, and your ankles are under your knees . If you don't you won't be using your ass cheeks as effectively as you should . Tuck your chin and really drive up, proper squeezing your butt together like someones trying to nick a £100 note from your ass cheeks . Slow on the way down and load it up . PS Make sure you drive with your heels and not your toes
