Here we are! The result about the flow rate in the cold brew tower. So I've setup each column with a different flow rate, the first one was 1 drop every second, then 1 drop every 2 seconds and finally 1 drop every 3 seconds. This are my results about the TDS: 1 - 1sec: 1,99% 1 - 2sec: 2,04% (+0,05) 1 - 3sec: 2,09% (+0,05) Even if it's not that easily identifiable, you can feel a slightly difference in the mouthfeel. For me it was 'almost' the same so I can't really talk or judge about the TDS. The only thing interesting is the consistent difference of +0,05 TDS between the drinks. Now about the extraction, if for the TDS there is no big differences, with the extraction it's different, these are my results: 1 - 1sec: 21,37% 1 - 2sec: 22,16% (+0,79) 1 - 3sec: 22,75% (+0,59) ▪I'll start with the last one, 1 drop every 3 seconds: this drink was... It was bitter... Astringent... It wasn't a good drink at all... ▪The one at 1 drop every 2 seconds was still bitter, a really not pleasant aftertaste but drinkable. ▪And then the one with 1 drop of water every second was smooth, light and I thought when I was tasting it that I would happily pay for this drink without regrets! How a simple thing such as 1 drop of water in a different time lapse can change and give a strong bitterness to your cold brew? To do it simple, my guess is: the water before to drain away from the coffee container need to reach a specific quantity. • At 1 drop every second, the coffee container will have this specific quantity way more quickly than the two others. To that effect the contact time of the water with the coffee is reduce. • At 1 drop every 3 seconds, the coffee container need a lot more time before to reach the specific quantity of water and let it drain away. The water will stay longer in contact with the coffee and this water will extract more soluble from the coffee, the brew become over-extracted. Did you find it interesting? Have you got any other idea? Any comment about this? In my next test to explore the cold brew method, I'll try 3 different water with different TDS. Follow, share and stay aware!
