Happiness is.... . Hot soup on a cold day🍲👌🏻 . I think I outdid myself on this one😊 My husband is NOT a soup but this was thick & hearty and he had multiple servings! . 🍲Rustic Turkey & Veggie Soup🍲 Ingredients: 🔸1 lb. 93% lean ground turkey 🔸2 tsps oregano 🔸Sea salt & pepper (to taste) 🔸3 cloves garlic (minced) 🔸1/2 yellow onion (chopped) 🔸1 yellow bell pepper (chopped) 🔸1 zucchini (diced) 🔸2 - 14.5oz cans diced tomatoes 🔸1 - 8oz can tomato sauce 🔸2 cups low sodium chicken broth 🔸1/4 tsp red pepper flakes (optional) 🔸2-3 cups fresh spinach 🔸Shredded Parmesan cheese (for garnish) Directions: 1. In a large soup pot, brown turkey over medium high heat. Break it up as it cooks into smaller pieces and season with sea salt, black pepper, & oregano. 2. When meat is cooked through, add onion, yellow pepper, zucchini, & garlic. Cook until onion are translucent (~3 minutes). 3. Add tomatoes, sauce, & broth. 4. Cover & simmer over medium low until veggies are soft & cooked through (~20-30 minutes). Stir occasionally. Add in spinach before serving & stir until wilted. 5. Serve topped with shredded Parmesan cheese. Serving size = 2 cups 21 Day Fix counts: 2💚 1❤️ 1💙
Pre-pregnancy you wouldn't catch me eating a banana unless there was a gun to my head. If I had it in my smoothie I'd have to blend it for 30 minutes to make sure there were no chunks or I'd gag. Pregnant- give me all the bananas! Not complaining! I'm glad I like them and hope it continues. Lately my fave late night snack is banana slices with PB2 (mix it was water to form the smooth PB consistency) and few dark chocolate chips. Pop in freezer for few minutes and ENJOY! #alltheyums
One of my favorite meals from my meal prep list is this dirty rice. I made a whole pot of it this weekend and we had the last of it today. So good and so versatile. It is also vegan! Whoaaa. So I started by sautéing one chopped yellow onion, one chopped green pepper for about 6 minutes in a bit of oil and two tablespoons of old bay seasoning, dash of cayenne pepper, cumin, chili, and salt. Add one can of black beans, washed and drained. Mix them well then add two cups of rice (I used brown and wild rice) then add four cups of water or vegetable broth,add salt, then bring the mix to a boil. Once it's boiling, turn the heat to low and cover. Cook for at least 30 minutes (brown rice takes longer than white rice to cook). I like mine with a side of roasted potatoes, avocado salad, and limes. Yum!
Dinner was so yummy!! 🤗 . Chicken breasts baked over a bed of green beans, potatoes and onions, seasoned with olive oil, salt, pepper, garlic, red pepper flakes, oregano, lemons and parsley... What's the big potato? Being healthy for long term is all about little consistent baby steps. My favorite switch was from eating potatoes to eating sweet potatoes. Cilantro Lime Cauliflower Mash. Ingredients: ½ of a large head of cauliflower ½ sweet onion, diced 3 cloves garlic, minced ½ cup fresh cilantro, chopped zest of one lime half a lime, squeezed once cooked 2 tbsp grass-fed butter crystal salt & pepper to taste Directions: Use a food processor to pulse cauliflower into a mash. Heat a large pan over medium heat and add 1 tbsp butter. When butter is melted, add the onions and garlic. Sauté until just translucent, then add the mashed cauliflower. Gently cook through, about 5 to 7 minutes. Then add in the lime zest and fresh cilantro. Mix together in the pan and transfer to bowl. Add in the other tbsp of butter. Squeeze fresh lime juice over the mash and serve. Season with salt and pepper. Enjoy!

@restaurant_lume proving culinary art is science. There's a certain ecstasy in trying to identify all those little heroes that join forces into a massive explosion of flavours in your mouth. This was the softest, most delicious octopus I've ever had but the star of this dish is the sauce. Go try the 'Road' menu one night. Totally worth it!

Tb to my pre-workout dinner tonight💪🏼❤ I had a long but good day at school today: 3 interesting classes, Falafels for lunch and lazer war (Megazone) with our PE group😎 I went to buy myself a snack after school and was about to pay my apple and a Propud when I started to crave nuts when passing the pick and mix nuts. So I ended up buying some cashews, too😍I can't remeber when I last time did that🤔I will definitely make that a habit😛! Then I went to my mom's working place to do my homework until she was ready to leave and we popped in a grocery store on the way home.
