Alrighty, I'm sure some of you are gonna think this is gross but it was super tasty (I swear!) I made some chicken liver pate from the #whalsprotocol book and it's the best one I've eaten... like, I actually liked this one and even went back for more! I served it with some steamed kale, smothered in my coconut ranch I made yesterday (no recipe yet), sweet potato rounds and veggie sticks for dipping. Chicken liver is the mildest tasting organ meat and is full of protein, iron, zinc, vitamin A and B vitamins... offal while discarded now, used to be coveted as the most nutritious part of the animal. VITAMIN D 🌞 more than just a happy pill?  As many people know, Vitamin D is the "sunshine vitamin" in the the winter season. This vitamin stores in our bodies for 3 months, which is why people notice that depressed and unmotivated feeling during February-March. Vitamin D, along with a probiotic and omega 3s have been proven to treat depression in many cases over anti depressant use. It's important to supplement with this vitamin during the winter season, but also throughout the year. Individuals with poor mental health should consider Vitamin D supplementation on a daily basis. Vitamin D is also great for our immune health. It brings up the immune system when it is under active and when our immune systems are over active, D brings them down- creating a healthy balance. Individuals with auto immune disorders are usually Vitamin D deficient due to weak immune function. Before going nut free, one of my favorite Thai dishes was a chicken, spinach and onion dish covered in a rich peanut buttery sauce over rice. It was SOOOO good!  But alas, having a kiddo who's body is deathly offended by peanuts, that Thai dish is a thing of the past. But this dish - THIS DISH, is pretty darn close to that taste AND NO ONE in my house can resist it's charm πŸ’ƒπŸ» Veggie Sunbutter over Quinoa.... YUM! ..---------------------------.. Ingredients- Use any veggies that sound good or that you have on hand. I used: β€’ 1 small onion, sliced thin β€’ 1 cup cabbage, chopped β€’ 1 cup green beans, chopped β€’ 1/2 cup Kale, chopped into ribbons β€’ 4 mushrooms, chopped β€’ 1 crooked neck squash, sliced. . β€’ quinoa, prepped per pkg Sauce: β€’ 2 Tbl Sunbutter β€’ 1 Tbl Avocado Oil β€’ @ 2 tsp Coconut Aminos β€’ 1 Tbl 100% Maple Syrup (or to taste) β€’ 1/4-1/2 cup water, to desired consistency. . Directions: - prep the Quinoa - in a wok or skillet, sautΓ© the veggies starting with those that take longest to cook and adding next as those start to soften (e.g., if using same as me: 1st onions & cabbage, 2nd mushrooms & green beans, 3rd Kale, and 4th squash) - mix sauce - pour sauce over done veggies, or serve on the side to be drizzled (as I have done) to one's liking. - serve. eat. Wish we had tried it sooner as we are running out of meal times here β€’ Grilled Prawns with coconut pilaf, Soft Shell Crab with Japanese soba noodle salad, and Ceviche served in Tostada. They also sell different flavoured slushes which were delicious and so refreshing - coconut, mango/ginger, and a pineapple/mint/passionfruit.
