VITAMIN D 🌞 more than just a happy pill? As many people know, Vitamin D is the "sunshine vitamin" in the the winter season. This vitamin stores in our bodies for 3 months, which is why people notice that depressed and unmotivated feeling during February-March. Vitamin D, along with a probiotic and omega 3s have been proven to treat depression in many cases over anti depressant use. It's important to supplement with this vitamin during the winter season, but also throughout the year. Individuals with poor mental health should consider Vitamin D supplementation on a daily basis. Vitamin D is also great for our immune health. It brings up the immune system when it is under active and when our immune systems are over active, D brings them down- creating a healthy balance. Individuals with auto immune disorders are usually Vitamin D deficient due to weak immune function. It is also extremely important for growth of teeth and bones, and maintains normal blood levels of calcium and phosphorus. The list goes on... Once upon a time I would've saturated my healthy rice roll in the accompaniment - peanut sauce 🤔😈 👻Sugar👹Sugar ☠️ Tomato Sauce, BBQ Sauce, Satay Sauce..... generally have a shitload of sugar. It's been one month since removing the obvious Sugar laden foods from my diet and wow the benefits are real, I am most definitely honouring my body (trying) and I'm feeling even MORE amazing. Before going nut free, one of my favorite Thai dishes was a chicken, spinach and onion dish covered in a rich peanut buttery sauce over rice. It was SOOOO good! But alas, having a kiddo who's body is deathly offended by peanuts, that Thai dish is a thing of the past. But this dish - THIS DISH, is pretty darn close to that taste AND NO ONE in my house can resist it's charm 💃🏻 Veggie Sunbutter over Quinoa.... YUM! ..---------------------------.. Ingredients- Use any veggies that sound good or that you have on hand. I used: • 1 small onion, sliced thin • 1 cup cabbage, chopped • 1 cup green beans, chopped • 1/2 cup Kale, chopped into ribbons • 4 mushrooms, chopped • 1 crooked neck squash, sliced. . • quinoa, prepped per pkg Sauce: • 2 Tbl Sunbutter • 1 Tbl Avocado Oil • @ 2 tsp Coconut Aminos • 1 Tbl 100% Maple Syrup (or to taste) • 1/4-1/2 cup water, to desired consistency. . Directions: - prep the Quinoa - in a wok or skillet, sauté the veggies starting with those that take longest to cook and adding next as those start to soften (e.g., if using same as me: 1st onions & cabbage, 2nd mushrooms & green beans, 3rd Kale, and 4th squash) - mix sauce - pour sauce over done veggies, or serve on the side to be drizzled (as I have done) to one's liking. - serve. eat. I love knowing that are foods are medicine. We hear so much about bad and junk food but rarely the benefit of foods as medicine. Here are some great ways to add cabbage to foods... the obvious of course is salad, but it tastes great in tacos and not just fish tacos. You can throw a handful in a bowl Of soup to add crunch or even in a sandwich. What you favorite way to eat cabbage or dish that you add cabbage to?
Stand out meal for lunch today! Lantern Fish has popped up since we were last in Port Douglas and it was absolutely amazing! Wish we had tried it sooner as we are running out of meal times here • Grilled Prawns with coconut pilaf, Soft Shell Crab with Japanese soba noodle salad, and Ceviche served in Tostada. They also sell different flavoured slushes which were delicious and so refreshing - coconut, mango/ginger, and a pineapple/mint/passionfruit.
