What do you do with a lonely parsnip, a piece of red pepper, an avocado that probably would have been better yesterday but is still ok and a lime that has seen prettier days?? STOP!! No no no, don't throw any of it out! Put your thinking cap on and create lunch. Mash the avocado with the juice from the lime & the chopped pepper, season & set aside. Grate the parsnip, beat 1-2 eggs (2 if it's a big one!) with cumin & coriander, and add along with a tbsp of flour. Add dollops to a pan and fry for a couple of minutes either side, you'll have lovely parsnip fritters. Keep warm on the hot plate or in the oven while you poach a couple of eggs. Plate up, drizzle with sriracha and a delicious lunch is yours 😊

These beautiful piroshkis made out of coarsly ground buckwheat, filled with potatoes, onions and wild garlic I had last summer when I was in Poland for a wedding. They were so perfect! Now I’m wondering if anybody of you has a really good recipe or tips for savory buckwheat dumplings? Would be great because I would like to recreate them. Happy Monday dear friends!
