Green spinach & pineapple power bowls topped with Anina's @aniahimsa yummy matcha lime granola - that stuff is soooo good! 💚Thank you sweetie.  I did NOT use fresh pineapple for this smoothie yet the pineapple flavour was super intense! All I used was ONE slice of high quality dried pineapple. Are you guys using dried fruit for your smoothies?  As you may have noticed I'm much more into seasonal & local food but of course I still find myself craving tropical fruits once in a while. Dried fruits are usually produced right where they're harvested, thus making transport much easier and more energy-efficient. Also small producers with really good quality fruits who cannot compete with larger ones may be able to gain from export this way. And fruits like e.g. pomelo are not covered in nasty preservatives this way. Recipe in the comments. 👇

Stuffed Spaghetti Squash w/ Chickpeas & Garlicky Arugula Cream 🙌🏻 The recipe on the whole was easy to pull together (her tip to roast the squash cut-side face up was great!) and that sauce! That *sauce* is pretty boss -- and so happy that the recipe made extra!! Always impressed, never disappointed with Laura's recipes! 💚

Snapshot of my day. Started off with 16km bike #bootycall and some more coconut berry overnight oats 🍓whipped up some maple brussels for dinner with some delicious chicken tenderloins. It was even #TIUfiance approved! Also did arms and abs and the daily moves for my PM workout. Those hamstring sliders......burrrrrrrn!!! Definitely starting to feel some good changes in my body and hoping they start showing through soon! #toneitup #tiuteam #tiucheckin #tiumeals #tiuchallenge #tiu2017 #lookforlove #eatyourgreens #stubbsbbq #chicken #macros #protein #mealprep #consistency

PINK SALMON WITH LEMONY KALE AND ROASTED SQUASH AND BEET SALAD 🐟💛💜 **************************************** Gårdagens middag! 🙌🏻 Varför jag valde att köpa vildfångad chumlax/pinklax istället för "vanlig" lax kommer jag skriva mer om i nästa #veckanshälsopromotion, men kan väl hinta om att jag fått upp ögonen för att odlad lax inte är helt oproblematiskt... **************************************** CHUMLAX Blandade i skål: ✅ Smör ✅ Hackad persilja ✅ Salt och peppar Smetade sedan över detta på varje laxfilé och bakade dem i ugnen på 180 grader i ca 10 min (använde termometer - 48 grader ska laxen vara när den är klar!) **************************************** ROSTAD BUTTERNUTPUMPA OCH RÖDBETSSALLAD: Skar i kuber och rostade i ugnen å 200 grader, ca 30-40 min, med kokosolja: ✅ Ca 800 g rödbetor ✅ 1 st butternutpumpa När grönsakerna svalnat blandade jag dem i en stor skål med: ✅ 2 msk olivolja ✅ 3 msk apelsinsaft (alltså från hel apelsin, inte färdig saft) ✅ Lite klippt bladpersilja ✅ Salt och peppar  Recept från @healthdashbent #primalcravings **************************************** SNABB GRÖNKÅL: Stekte på medelvärme, i lite baconfett (går bra med valfritt matfett) i ca 5 min: ✅ En halv påse hackad grönkål Precis på slutet hade jag i: ✅ Några droppar citronsaft ✅ Salt och peppar Recept från @fedandfit 🙏🏻**************************************** Åt med mixsallad och en koriandersås jag hade kvar hemma (som jag glömde lägga på när bilden togs 😅), men funkar med mayo, pesto, avokado.. Legumes, starches, leafy greens, berries, sweet fruit, citrus fruit, seeds, nuts, vegetables, herbs, spices, roots. 🌈✨ This salad contains baby spinach, kale, cucumber, bell pepper, fennel bulb, peas, black sesame, baked purple and orange sweet potato cubes and purple cabbage.  The dressing: - the juice of 1 lime - 2 Tbs peanut butter - 1 Tbs rice vinegar - 2 Tbs coconut sugar - a teaspoon sized piece of ginger - 1/2 tsp turmeric✨✨✨ - 1 Tbs soy sauce - 3-4 Tbs water >>> blend everything in a high-speed blender.  I also added a piece of aloe Vera and some cayenne pepper but that's only optional if you like it spicy :) 🌶 Have a lovely Tuesday everyone (and sorry for posting my dinner so late I didn't have time yesterday anymore🙈) ❤❤❤✨✨✨
