Early Sunday dinner: Mangu with Lean Chicken. In Dominican Republic this is one of our signature dish which is normally prepared with Salchichon (dominican sausage) and fried white cheese. The plantains are mashed with butter or with the oil from the sausage and cheese. I made this much healthier by mashing the plantains with Coconut oil. I also substituted the sausage and cheese for lean chicken. Same taste but healthier. Diets don't work.
