Yum! Baked Egg in Avocado: Ingredients: ½ medium avocado, pitted 1 egg Sea salt & pepper 1 tablespoon chopped chives Directions: Preheat oven to 425 degrees. Scoop out a little avocado from the center to make room for the egg. Crack eggs into a bowl then, spoon the yolk and egg white into the avocado’s hole. Place on baking dish and bake in the oven for 15 minutes. Check that egg whites are cooked and remove from oven Season with salt and pepper and sprinkle chives on top. 240 calories per serving

As unlikely as it sounds, this combination is utterly fantastic, both savoury and refreshing at the same time!! You can break it down to the essential contrast, and serve no more than a plate of chunked watermelon, sprinkled with feta and spritzed with lime, but this full-length version is hardly troublesome to make and once you try it, I assure you, will become a regular feature of your table. Watermelon Salad 🍉1kg watermelon (sweet and ripe) 🍉1 small red onion 🍉200g feta cheese 🍉1/2 bunch of fresh mint 🍉Extra virgin olive oil 🍉Glazed balsamic vinegar or juice of 1-2 limes ✔Dice the watermelon flesh into chunks ✔Peel and finely slice onion (if using lime, soak onions in lime juice to diminish their rasp) ✔Crumble the feta ✔Pick the mint leaves, tearing any larger ones ✔Place all into a bowl and combine ✔Drizzle over a little oil and season with black pepper Absolutely love this combo and it tastes like sunshine 🌞🌞🌞 . . @dodoni_feta @sanpellegrino_au @aanna_bananaa watermelon turned out fine👌

Completely unexpectedly, Kapit Borneo spoils us with #rollinias . Its crazy but every consequent one is better than the last. These were crazy good, identical inside to the previous ones altho very spiky comparing to the prev flat ones. We had them perfectly ripe, see thro inside and so easy to peel, Id just pull on each 'claw unit' one at a time. Or could it be the rollinia microbiome in me already introduced with the first fruits causing me to develop a taste for them?
Taco Salad! - I recreated my own recipe to eliminate the bad in this salad.. I swapped the sour cream with non-fat Greek yogurt (two tablespoons), instead of fatty white flour tortilla chips I use a GMO free Organic/GF blue corn chip which is high in fibre, low in fat, sodium and calories, I use low sodium salsa(need to learn how to make my own soon), and instead of fatty red meat I use turkey ground 1/4 package for my serving, and a low sodium taco seasoning but only using 1/4 of the package. I toss in diced red and yellow pepper, lettuce, tablespoon of corn, franks red hot sauce, cucumber, tomato and cilantro! Here's a little food prep I did for this week! I haven't been big on food prepping in a coooooool minute, but with school starting back, I figured it'd relieve some stress this week. All of the chicken is baked (various ways) & the veggies are steamed. I love love LOVE steamed broccoli and could eat it with every meal😁😊 I also made some Cajun sweet potato fries (much better than I expected) and paired it with a season pork "roll". For snacks, cocoa almonds & orange flavored cranberries, fruit, pistachios, cuties, & cheese sticks. - I did legs today, practically as heavy as I safely and properly could, for the first time in a long time. I found my limits today, and I set some goals💪 I feel GREAT & I'm already looking forward to my next leg day! (Even tho I'm already sore😂😂) #Accoubtability

We've been setting out from Kapit on short day trips everyday. West, south and then yesterday - east. We cannot head north as the huge stretch of the Rajang River limits us and theres no bridges or roads on the other side, no way to cross the river in fact. Nothing but jungle around. In fact its the wildest place we've stayed in Borneo so far. And yet - not that many foragging opportunities here. There's stretches of land that are green but not potent with fruit trees or jungle. Its become obvious to us that the jungle is shrinking rapidly here. As we drive by, we see huge stetches being cut down exposing the bare red earth. Then as we sit on the river bank and eat we'd often see a cluster of small fishing boats, say 6 of them, all tied up together pulling a transport of hundreds of pieces of timber down the river. Some of the trees in the transport are huge, the whole lot moves slowly, the ppl in the boats must be on water for days. Its apparent that there isnt many opportunities for jobs apart from the timber industry and transport up and down the Rajang River. Kapit town where we're staying was 60K inhabitants in 2002 and just 18K today as young ppl migrate to the big cities. Meanwhile, the jungle remains the source of income for those that stay. As we drove by the hills yesterday, covered only by grasses, ferns and pioneer tree, I started to wonder - how long does it take for the rainforest to grow back? A hundred years? No, some of the durian trees alone are 100+. A thousand years to recreate the ecosystem? Simon @all_raw suggests that its not possible ever again as the rooting systems of the old trees stay in the ground making it impossible for the new trees to flourish. Its all very sad, that the next generations may only be able to experience the rainforest in patches of reservoirs 😞#climatechange#conservation#wildlife

Special Dark cacao powder 1 tbsp. @pyuresweet organic stevia blend 1/2 tsp. baking powder 1/2 cup pure pumpkin 1/4 cup egg whites 🍪Filling: 3 tbsp. whipped cream cheese 1 tbsp. @pyuresweet organic stevia blend 3 mini Oreos, crushed Topping (optional): 25g @eatsmartsweets gummy bears 🍫Directions: 1. Whisk together dry pancakes ingredients (through baking powder). 2. Mix in pumpkin and egg whites until just combined. 3. Combine filling ingredients and spread between cakes. 5. Day 7 of the Health Bet ... Today's Hammer & Chisel workout was called #chiselcardio which I love ... 40 minutes of resistance, cardio & weights ... in the comfort & privacy of my own home ... on my time ... when it's convenient to me. And luckily today, I was to sleep in and miraculously my kiddos slept in as well. I'd call that a win!
