An update on Pinos progress as he strives towards his goal of rowing 10km per day for 100 days, reaching a massive 1 million metres in total. We now sit at day 34 and Pino has surpassed his original expectations as he now sits at the half way mark already! For those that know Pino well, will know that Pino is one of the most resilient and motivated people you will meet. Hey Anytimers! Here's a quick and easy dish for you all to try this week :) Ingredients 500gms whole-wheat spaghetti 1/2 cup salt reduced soy sauce 2 tablespoons sesame oil 2 tablespoons canola oil 2 tablespoons lime juice 1½ teaspoons crushed red capsicum 1 bunch spring onion, sliced, divided ¼ cup chopped fresh coriander, divided 4 cups snow peas, trimmed and sliced on the bias 1 medium red capsicum, thinly sliced ½ cup toasted sesame seeds Method 1. Bring a large pot of water to a boil. 2. Cook spaghetti until just tender, 9 to 11 minutes or according to package directions. Drain; rinse under cold water. 3. Meanwhile, whisk soy sauce, sesame oil, canola oil, lime juice, crushed red capsicum, ¼ cup spring onion, and 2 tablespoons coriander. 4. Add noodles, snow peas and red capsicum; toss to coat. To serve, mix in sesame seeds and garnish with the remaining spring onion and coriander.
